Edinburgh Honey Co have been keeping bees in their family since 1957. They are a third-generation beekeeping family originally from Poland and pride themselves in the fact that their honey is sustainably sourced and ethically produced from their bee hives in Scotland and some varieties from their Polish family hives. All their honey ranges are natural, raw and unprocessed. They have unique honey infusions, and make handcrafted beeswax products – all with a commitment to zero waste and plastic-free packaging. Heather Honeycomb. Ling Heather honey is reddish/orange to dark amber. It has a slightly bitter, tangy, pungent, smokey, mildly sweet taste that persists for a long time. It has a strong distinctive woody, warm, floral, fresh fruit aroma reminiscent of heather flowers.

The crystallisation rate is quite slow and in early stages results in a smooth light-coloured mass, and if very pure, it may not crystallise at all.

 

Scottish Blossom Comb comes from their own apiary at the Falkland Estate in Fife which is located in the heart of the estate near an apple orchard and surrounded by wildflowers and woodland.

Their bees get to enjoy apple blossom nectar as well as clover, Himalayan balsam, oak, lime, and other wildflowers. It is an organic land so the bees are thriving there and the honey produced is very tasty.

For Blossom Honey Bees forage on whatever is in bloom, bees will find it and make honey out of it. In the early spring, the honey is very light and delicate blossom mostly from apple bloom and rapeseed that are being farmed at the estate.

Later throughout the summer bees forage on local trees such as:
Linden, Willow, Oak, Chestnut as well as on clover, phacelia, and other wildflowers which grow in abundance around the apiary.

Falkland apiary is one of their most productive sites due to the biodiversity that bees get to live in and the fact the farm is fully organic which makes it an ideal environment for the bees.

Acacia Honeycomb due to it’s gentle nature and mild flavour is a perfect replacement for sugar in any flavour sensitive dishes. The most popular use for it is in beverages as it dissolves very easily and doesn’t overpower other flavour notes.

What is Comb Honey 

Stated by the Edinburgh Honey Co, Comb Honey is honey intended for consumption which is still contained within its original hexagonal-shaped beeswax cells, called honeycomb. It is eaten as produced by honey bees and has received no processing, filtering, or manipulation.

Before the invention of the honey extractor almost all honey produced was in the form of comb honey. Today, most honey is produced for extraction but comb honey remains popular among consumers both for eating ‘as is’ and for combining with extracted honey to make chunk honey.

Hobbyists and sideliners can develop their beekeeping skills by producing comb honey, which takes more rigorous attention to beekeeping than the production of extracted honey. Comb honey production is more suitable for areas with an intense prolonged honey flow from eucalyptus, alfalfa, alsike, and yellow clover.

Wooded areas are not as suitable for comb honey production, as bees tend to collect more propolis, making the harvesting of comb honey more difficult. This problem has been largely circumvented with the adoption of specialized frames, such as the Ross Round frame, which prevent the accumulation of propolis on saleable units.

Perfect with Cheese, spread on toast, scones, use it to reinvent your salad, add comb to batter when making pancakes or scones or simply eat it as it is.
